Nachos Grande
February 3, 2011 - Written by DesireeWhether you are rooting for the Packers or Steelers you will have to agree that part of watching the Super Bowl is deciding on what food you will be serving during the game. My husband and I recently purchased a large screen television for our basement rec room. The kids use it for video games, we watch movies on it and this year, he is having the guys over to watch the Super Bowl on it.
I have already decided that I am making Diana’s Chipotle Baked Beans and Kolbasz in the crockpot for the guys to enjoy. I am also making one of our super bowl munching favorites, Nachos Grande. Nachos Grande is basically a baked nacho dip. It is messy, but oh so tasty finger food.
Ingredients:
- I bag of nacho chips
- 1 can of refried beans
- 1 bottle of salsa
- 1 container of sour cream
- 1 can sliced black olives
- 2 cups of cheddar cheese
Spray a 9×15 pan with cooking spray.
Place a generous layer of nacho chips in the pan.
Sprinkle cheese over the nacho chips.
Spread refried beans over the chips and cheese.
Bake at 350 degrees for about 10 – 15 minutes …
Hearty Cream of Potato Soup.

I live in a primarily male household. Living with two teenage boys means big appetites that need to be satisfied while also satisfying their different palates. Hollow Legged Son doesn’t care for a lot of meat or spicy foods while Younger Brother is willing to try anything but most vegetables and things cooked in tomato sauce. When it comes to fruits they have different favorites. However, they agree on my Hearty Cream of Potato Soup.
HLS loves soup. This is no surprise because he is a big fan of vegetables. Yesterday my husband and I had a dinner meeting to go to, so that meant the boys were either on their own for dinner or I could prepare something. Diana’s article on making and canning broth made me think about making some potato soup. Potato soup is something both boys seem to enjoy and since I make a big pot, I can take it to work for lunch the next day.
Potato soup is one of the easier cream soups to make. I learned how to make it from my 20 year old …
