Parade Magazine - In this week’s issue of PARADE, three top chefs—Food Network star Paula Deen; Lidia Bastianich, host of PBS’ Lidia’s Italy; and the Cooking Channel’s Daisy Martinez—talked about their approach to making the family dinner special—and keeping it real.

Dash is a new food magazine produced by PARADE which is found inside many local  newspapers.  Dash will begin showing up regularly in February, but they put out a preview in this week’s  issue.  You can find the interview with our favorite family chefs online as well as other Dash recipes.     Coastal Uncorked Food & Wine Festival – is hosting a poster competition for their second annual food and wine festival.  The competition is open to artists of all ages who submit an original piece of artwork for judging by Tuesday, November 30. A committee of judges will select the winning poster based on its design quality, marketability and its ability to most effectively display the concept of the Coastal Uncorked Food & Wine Festival. The winner will receive recognition as the official 2011 Coastal Uncorked poster artist and will win a $500 cash prize.   The winner of the competition will be announced on Thursday, December 2 at the Franklin G. Burroughs-Simeon B. Chapin Art Museum during a champagne and passed hors d’oeuvres reception.  The Coastal Uncorked Food and Wine Festival will be May 8 – 15, 2011 and is the Myrtle Beach, S.C. area’s premier food and wine festival.

      For my son’s party, we had a platter of Walker’s cookies out for everyone to share.  These cookies are timeless, classic cookies, that took me back to being a kid growing up in my grandparent’s house.

      When we were kids, we lived in my grandparent’s house.  There were three floors and each floor was a separate apartment.  When we were really small, we had one of the floors, my grandparents another, and my cousins the third.  My cousins eventually moved out, but we didn’t share the extra floor, so it stayed empty.  My grandmother had a store, and she and my grandfather ate a late dinner every night after they closed the store for the night.  They were smart grandparents, they knew that the best way to get visits from the grandchildren was to have dessert out while they ate.  There were six of us, and we went to bed at different times. However, we all knew about the desserts, and we all knew that if we went up to say good night to our grandparents, we would get some dessert.  Most of the time dessert was cookies and short bread cookies was one …

      I’ve been to this step before in the farm markets.       Winner! Dinty Moore/ Hormel Chili Giveaway.

      We had tons of great recipes and comments on our giveaway, it was really hard to think about choosing a winner.

      We made our own chili dip and it not only disappeared, but then I made a second batch and it disappeared too.  Really.  We ran out of nacho chips, so peppers, crackers and pretzels were used.

      Here’s the quick dip.

      I can of roasted tomato chili – heat up in the microwave in a glass or heat proof bowl  Sprinkle with cheese – you can either put in for another minute, or let it melt naturally if the chili is warmed enough.  Top with diced peppers, green onions and tomatoes, then dollop sour cream on top.  It’s a really cool snack for the high school crowd, that’s for sure.

      Okay, enough of the small talk our winner is Cass who said:

      Hormel chili in a casserole of Sliced semi-cooked potatoes and cheddar, chives and bacon bits layered and baked at 350 degrees for 45 minutes.

      Cooking with garlic is one of the best ways to flavor a dish. I grow garlic, I cook with garlic, I buy garlic flavored stuff and I love the smell of garlic cooking.  Any time you throw a few garlic cloves in with a roast, the kitchen smells wonderful.  April 19th (today ) is national garlic day, a day we should all observe by cracking open a few cloves.  I might make some garlic potatoes for dinner tonight, that would be a great way to celebrate don’t you think?

      Bertolli’s Into The Heart of Italy Webisode – The Secrets of the Fungaioli

      The second webisode of Bertolli’s Into the Heart of Italy starring Rocco DiSpirito, Marissa Tomei and Dan Cortese came out on Monday, March 29th. The new webisodes are going to appear approximately every 2 weeks. This week they start out in pistoria, and end up meeting the fungaioli and harvesting mushrooms.
