Rum and Watermelon Fruit Salad

Now that the summer is upon us and you can get nice fresh watermelon, here’s a simple salad that’s sure to be a hit with the adults at your memorial day party.  I served it a couple of nights ago at a dinner party and it sure was a big hit.  You know how you can tell something’s good?  No-one’s talking. 

Ingredients:

  • 1 small seedless watermelon
  • 3 bananas
  • a bunch of seedless green grapes
  • TBLSP of lime juice
  • 1/2 cum of rum

Method:

  1. Cut 1/3 of the watermelon off the top.
  2. Take out all of the watermelon using a spoon or a melon ball device if you like to create a watermelon bowl.  Put the fruit from the watermelon in a tupperware bowl.
  3. Slice up the bananas [make sure you peel them first]
  4. Cut the grapes into quarters.
  5. Mix about half of the watermelon with the grapes and the bananas
  6. Add the lime juice and mix well
  7. Add the rum and mix well.
  8. Put the mixture back in the watermelon bowl and put the watermelon top back on. 
  9. Place it standing up in the refrigerator and chill for a few hours before serving.

Some hints:  It doesn’t matter what other fruits you use.  Go ahead and experiment.  If you’re going to a party with children in attendance, you may want to make two one N/A.  Make sure you mark the outside of the watermelon to be sure the kids don’t eat the good fruit.

Use Lemon Juice to Keep Your Fruit from Browning

My son likes to take apple slices to school for his snack but he doesn’t like opening his snack bag to find brown slices. I find that if I toss the apples in lemon juice before packing the apples will keep fresh. This works with most fruit - it keeps avocado, pears, bananas and other fruits from turning brown after they’re peeled and chopped.

The lemon won’t spoil the flavor. A little bit does the trick and you if you taste it at all it’s very faint.

Applesauce

It’s easy and it’s healthy and it’s tasty.  My mother showed me how to do this years ago and I prefer it over any brand name sauce.   I make a batch especially for roasted pork or turkey as an alternative to the jelled cranberry crap that everyone serves.  An added bonus?  It sure makes the house smell nice.
