1 large paw paw (or many small ones) peeled and seeds removed.

1 cup pineapple juice

1 cup lemon lime soda

vodka

I put the paw paw and the pineapple juice into the bullet and blended it, added the soda and stirred then added the vodka to the right strength. This is yummy.

I’ve been starting to grow mint down the hill that runs along my deck, so the mint is from my yard. You can find it at a farmer’s market or at the local market. Peaches are in season right now in Ohio, I purchased my peaches from Lynd’s fruit farm near Pataskala – they are sweet and juicy and oh so delicious. I sliced up a peach into a pint jars, threw in mint plus some vodka (OYO again) to soak and mashed it with a spoon. Let it sit for a few minutes to gather the flavors. I poured the mess into a cocktail shaker and added ice before shaking it up. Pour into glasses, add a little of your favorite sparkly soda (like a lemon lime or ginger ale). The peaches are sweet, so you don’t need a simple syrup. Light and delicious with a fresh minty finish – oh it’s good. And Yes Deborah Ng – I’m boasting that it’s better than your peach cider with rum.

The recipe I received along with the sample of Bailey’s Mudslide suggested throwing 16 oz of Bailey’s Mudslide cocktail along with two cups of ice for a frozen mudslide cocktail. I went one further. I made Mudslide shakes using ice cream. The part where the lid fell off, and everyone else’s drink went all over the floor was too bad for them, but I managed to make sure I had enough for me. They got a sip – but that’s all I was willing to share.

So what would you make with a Mudslide mix?

Diana’s Mudslide Shake

2 scoops Ice Cream

1/2 scoop ice

Bailey’s Mudslide mix to taste

Dump into Blender, blend and pour into a glass – hopefully without the lid falling off .

Do you have any Mudslide recipes to share?

Here’s the Original - Bailey’s Mudslide

I prepared Lamb Chops with Sorrel Sauce and he made the salad to go along with it. This time, I seared thick cut lamb chops on each side in a grill pan, covered the pan with foil and placed it in the oven. You may be able to find sorrel in your grocery store near the salad ingredients, or you can be like me and buy a plant for your garden.

We served this with Barefoot Bubbly Rose Cuvee. While I’m not a big fan of sparkling wine, I found that I really like the Rose Cuvee. It isn’t as dry as the Brut Cuvee and has a bit more sweetness. It would be great for your momosa – a tasty Mother’s Day cocktail.

Follow that up with a tasty sweet cold dessert like Bailey’s Banana Split ; it looks like a really nice dessert. We didn’t have any bananas handy, but if we did I would have tried this out. If you are missing bananas, just serve vanilla ice cream with some Bailey’s Irish Cream with a hint of Caramel. Bailey’s is sweet, but not too sweet, and poured over ice cream really delicious.

So we had a nice dinner a day early, which means I get to relax tomorrow. What about you, what are you serving?
