Mango Pudding Cups

There are things I prepare every year, but I do like to switch it up a little and find something new to serve. I found the Mango Pudding cups in the Jan/Feb 2009 of Cooking Light. This mango dessert is heavenly, melt in your mouth delicious. I’ve made it a couple of times, and both times I was surprised at how exquisite it was. Even though I had it once before and thought it was delicious, I tried it again and thought once again, that it’s probably the best dessert I’ve ever had. It’s light and mangoey and sweet, yum.
- 3 mangoes peeled and divided
- 2 1/4 cups of water divided
- 1 tbs unflavored gelatin

Funky Monkey is a Heart Healthy Snack
February 28, 2009 - Written by DianaFunky Monkey is a really good tasting freeze dried fruit snack. It’s loaded with fiber, vitamins and anti-oxidants, and comes in five delicious flavors. My family had the opportunity to try out Funky Monkey snacks and we really enjoyed them. They are freeze dried and crunchy without being tough to chew. I’ve had other freeze dried snacks that just don’t have as nice of a texture as these do. Our favorites hands down were the banana with cinnamon and banana with acai. My husband – a pineapple lover, enjoyed the tart taste of the jivealime which is pineapple and lime. The Carnaval mix was pretty darn good too.

Valentines Day can be a very special day. A day for romance and sweetness and celebration. A day for roses and … mangoes. You thought I was going to say chocolate didn’t you. The National Mango Board and Ingrid Hoffmann of Simply Delicioso have teamed up to create a delectable mango menu that’s perfect from start to finish for Valentine’s Day. We’ve been trying out some mango recipes of our own and my family just loves the way they taste. For more recipes visit the mango board. Start out with this – demonstrations on how to cut a mango. Mine usually end up being smooshed a little, so this is a big help. Plus on this Love Your Mango page, they give a demonstration on making the Mango Tart and offer up romantic mango recipes. I didn’t find chocolate and mangoes(I’m not sure that would work), but the Tiramisu with Mangoes looks sweet to me. Enjoy!
Mango, Radish and Watercress Salad with Mango Vinaigrette
Ingredients:
- Mango Vinaigrette:
- 1 mango, peeled, pitted and sliced
- 1/2 cup vinegar
- 1/4 cup olive oil
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- Freshly ground pepper
- Salad:
- 2 bunches watercress, washed, stems removed
- 1 mango, peeled, pitted and diced
- 3 medium radishes, sliced
Instructions:
Put the slices of mango, vinegar, oil, sugar and salt in a blender and blend on medium-high speed for a minute. Pour vinaigrette in a bowl and refrigerate until ready to serve.
In a bowl, combine watercress, mango and radishes. Pour as much vinaigrette as desired and toss salad. Season with freshly ground pepper.
Any leftover vinaigrette can be refrigerated for up to 48 hours.

Fruit Tastings – Horned Melon, Ugli Fruit & Pomegranate

That can backfire if it’s bad, but most of the time my palate has been pleasantly pleased. If it’s something we really enjoy, we’ll add it to our pantry or fridge, otherwise it was a good experiment and we can say we tried it. Yesterday, College Girl (home for a 3 day wee
kend), my husband and I tried Kiwano(horned melon), Ugli (Uniq)fruit and Pomegranate.
- Kiwano – It’s also called horned melon, although to me it’s not melonish at all. It originates in Kalahari, Africa where it grows wild, and it has been cultivated in New Zealand and California. The horns aren’t sharp, but they can be difficult to get your hand around. Inside are plenty (a great deal) of seeds and a jello like pulp. The kiwano is part of the cucumber family, so it isn’t surprising that one of our thoughts is that it tasted…
Way Down Yonder in the Paw Paw Patch
September 16, 2008 - Written by Diana Yesterday, Hurricane Ike met up with a cold front coming from the West and blew over Ohio. It blew like crazy. It had been windy all day, but around 2:00 the wind was worse than I’ve ever seen it before. We were under a wind advisory from then until around 9:00 in the evening. Corn stalks were blowing across the yard. Branches are down all over my yard and driveway. My husband moved the cars to the middle of the front lawn so that they wouldn’t get hit by branches falling from the trees above the driveway. Leaves and twigs were driven into the cracks of the deck. I couldn’t sweep it out, I had to pick it out. We cleared the deck, literally. We grabbed everything on the deck and put it into the basement or below deck on the side of the house the wind doesn’t usually hit. One of the rain barrels kept blowing away so my husband stuck a ladder in it to hold it down.Today, as I was getting the mail and trying to avoid fallen limbs and branches, it occurred to me that I needed to check the Paw Paw Patch. I have two trees, that’s good enough to make a patch if you ask me. Not too many people around here own one tree never mind two. Two trees that are finally producing paw paws, albeit on a branch way over head that I can’t reach. Sometimes big windy storms can be a good thing when they blow down the big heavy paw paws to the ground. So I gathered up the paw paws carrying them in my shirt. That sounds funny, but it’s how I gather my fruit and vegetables some times. I wear old shirts when I’m working or around the house and they’re big enough to gather stuff in.
Deb’s Fruity Yogurt Smoothie
July 23, 2008 - Written by Deb NgMany mornings, I make a fruit yogurt smoothie and sip that while I have breakfast. My son also enjoys it for a snack. What I like about this smoothie is that it has plenty of calcium and a couple of servings of fruit. Plus you can use any fruit you want – to make it your own. Here’s how I make it:
- 2 Cups Dannon Light and Fit Yogurt
- Splash of pineapple juice
- 1 to 2 cups of fresh fruit and/or berries
Combine all the ingredients in the blender and let it whirl. In the summer, I like to use fat free frozen yogurt or ice cream as it makes a great, healthy cold treat. I’ll also use a more kid friendly brand of yogurt for my son’s smoothie – though he likes mine too. In mine, I might also add some oat bran for a little fiber – and to keep me full throughout the morning.

July 7, 2008 - Written by RobinI live in the western part of New York State, and yesterday at the farmer’s market there was a little sign, “last of the cherries.” I am a cherry addict and was duly saddened by this announcement. However, I was cheered by the fact that they were only $4 for at least two pounds, which is why you should shop at the farmers market because they would cost at least twice that at the grocery store.
See you next year, cherries! Coming soon: peaches, raspberries, blueberries, local corn…I LOVE this time of year!
Rum and Watermelon Fruit Salad

Now that the summer is upon us and you can get nice fresh watermelon, here’s a simple salad that’s sure to be a hit with the adults at your memorial day party. I served it a couple of nights ago at a dinner party and it sure was a big hit. You know how you can tell something’s good? No-one’s talking. Ingredients:
- 1 small seedless watermelon
- 3 bananas
- a bunch of seedless green grapes
- TBLSP of lime juice
- 1/2 cum of rum
Method:
- Cut 1/3 of the watermelon off the top.
- Take out all of the watermelon using a spoon or a melon ball device if you like to create a watermelon bowl. Put the fruit from the watermelon in a tupperware bowl.
- Slice up the bananas [make sure you peel them first]
- Cut the grapes into quarters.
- Mix about half of the watermelon with the grapes and the bananas

Use Lemon Juice to Keep Your Fruit from Browning
March 3, 2008 - Written by Deb NgMy son likes to take apple slices to school for his snack but he doesn’t like opening his snack bag to find brown slices. I find that if I toss the apples in lemon juice before packing the apples will keep fresh. This works with most fruit – it keeps avocado, pears, bananas and other fruits from turning brown after they’re peeled and chopped.
The lemon won’t spoil the flavor. A little bit does the trick and you if you taste it at all it’s very faint.
