Here are a few easy recipes you can throw together.Â
They aren’t elaborate because you don’t have the room or equipment for elaborate.
- Â Ramen Noodles - Break noodles up into bowl, just cover with water, microwave on high 3 minutes. For something a little more substantial add chicken (canned or frozen) and some peas.
- Biscuit in a cup - 1 cup of biscuit mix, 1/3 cup of milk, microwave on high from one to two minutes. For variety, you can add some cheese or microwave leftover gravy and sausage you brought from home to pour over the cooked biscuit .
- Chocolate Cake in5 minutes - This is one of my favorite blogs. If you like this recipe, put the dry ingredients into individual containers or baggies in a bigger container. I’ve never tried this, so let me know how it comes out. I have substituted applesauce or yogurt for oil successfully and you could try that also.
- Microwave scrambled eggs - Scramble two eggs. Pour into another bowl that has been sprayed with cooking spray or coated with butter or oil. Microwave on medium taking out every 15 seconds or so. The eggs will start to form, then you mix the cooked and uncooked part together, put it back in and keep doing this until it’s the correct consistency. Do Not ever put an egg in a shell into the microwave and don’t try a sunnyside up egg without piercing the yolk. It will pop.
- Baked Potato - Wash Potato well, pierce potato several times. Place in microwave on high for 5 minutes at a time. Check it, turn it over and put in for another 5 minutes until it’s done. As it gets close, you may go for a smaller amount of time. For a really good treat, microwave some chili separately and pour it over the potato with cheese and sour cream. Delicious.
- Taco - Microwave chili, pour over taco or corn chips, add cheese. If you have lettuce, tomatoes and sour cream, top it with that too.
