Grilled Chicken Salad with Dried Cherries

My kids weren’t home tonight, so we went with a Grilled Chicken Salad. My kids like salad too, but sometimes they want more than just that. We stopped off at the farm market and picked up some tomatoes and some cheese. I picked different types of lettuce leaves, some parsley and dill and a pepper from the garden. I sprinkled the chicken with some dried herbs and grilled it on a cast iron grill pan. When it was done, I added it to all the other ingredients that I had (which were torn or chopped into bite size pieces), plus I added walnut and some Welch’s dried cherries. I like adding dried or fresh fruit (sometimes canned) to my salads. They add a touch of sweetness, or tartness and taste really good especially when you get a bite of chicken and the dried cherries together. The cherries had a nice soft texture and weren’t chewy, but easy to eat. This isn’t the first time I’ve put dried fruit in my salad, however, I recommend Welch’s brand if you want to try it.

Welch’s newest dried fruit combination is Cranberries and Spiced Apple. It was like a handful of Apple Pie with Cranberries. Good stuff too. This morning I tried some of the dried fruit with cereal and yogurt. Yum. Here’s a recipe where you can use Cranberries and Spiced Apple dried fruit. Fruit-Crisp
South Beach Living Chocolate Pudding Cups and Peanut Butter Wafers
For Dessert we had South Beach Living Sugar Free Dark Chocolate Vanilla Marble pudding cups and Peanut butter Dark Chocolate Fudge Covered Wafer Sticks. I’m a chocoholic so almost everything chocolate (except ice cream and I’m not sure why) is doable. This stuff was better than doable. It contained xylitol - a sugar alcohol instead of a different type of artificial sweeter. So you didn’t have an after taste. It tasted as good if not better than the other pudding cup brands. The wafer sticks tasted like a Reese’s only a little drier with the wafer, so part cookie, part chocolate peanut butter candy. A two pack of wafers is a 100 calorie pack. The Pudding cups were delicious. I had one at work the other day, pudding cups are a great portable dessert. Then tonight, I had one and my husband had the other. He liked it as well as I did. Tomorrow I’ll take the last one to work and it’s only a 4 pack, so I can’t share, darn. It really doesn’t taste like a low calorie snack at all. South Beach Living
