Liven Up Your Leftovers with Thai Kitchen

I try to be creative with my leftovers. I use leftover vegetables to make a pasta salad or omelettes or to flavor my pasta sauce, and leftover meats or potatoes can be turned into a soup, stew or casserole. My friends at Thai Kitchen had a few ideas for leftover makeovers and I thought I’d share those recipes with you here today,.

You Have:  Roasted Chicken

Day 1 Leftover Makeover:  Thai Chicken Soup

2 cups chicken stock
2 stalks fresh lemongrass, bruised (or 2 Tbs. lemon zest)
2 Tbs. ginger root, minced
1Ž4 cup lime juice
1 can (14oz) Thai Kitchen Coconut Milk (regular, lite or organic)
1 package Thai Kitchen Thin Rice Noodles
Thai Kitchen Fish Sauce (optional)
Thai Kitchen Spicy Thai Chili Sauce (optional)

Prepare Thai Kitchen rice noodles according to package and set aside.
Bring chicken broth, lemongrass and ginger to boil.  Reduce to medium
Heat and add coconut milk.  Add sliced cooked chicken pieces and noodles.
Add lime juice, Thai Kitchen Fish Sauce and Chili Sauce to taste.

Day 2 Leftover Makeover:  Thai Chicken Fried Rice

1 box Thai Kitchen Jasmine Rice
1 egg
1 Tbs. vegetable oil
1 green onion, chopped
1 large carrot, minced
Thai Kitchen Fish Sauce (optional)
Lime juice (optional)

Prepare Thai Kitchen Jasmine Rice according to package.  Scramble egg and
set aside.  Stir-fry cooked chicken in oil. Add green onion, egg and
Minced carrots.  Add Thai Kitchen Fish Sauce and lime juice to taste.  Mix
rice In pan.

Day 3 Leftover Makeover:  Spicy Chicken Stir-Fry Rice Noodles with Basil

7 oz. Thai Kitchen Stir-Fry Rice Noodles
3 Tbsp. vegetable oil
2 cloves garlic, minced
1 green onions, minced
1Ž4 cup carrots, julienne
3 Tbsp. Thai Kitchen Premium Fish Sauce
2 Tbsp. sugar
1 small fresh chili, minced
Pepper (a pinch)
1 cup cooked chicken, shredded
1Ž4 cup fresh basil leaves

Prepare Thai Kitchen Rice Noodles according to package.  Set aside.
In a wok or large frying pan, heat oil.  Add garlic, green onions,
carrots and noodles.  Stir-fry for 1 minute. Add Thai Kitchen Fish Sauce,
sugar, chili and pepper.  Mix together for an additional 1 minute.  Stir in
chicken and basil to combine.
