Salmon Croquettes and Tortellini Alfredo

Family dinners are really important to me. I grew up in a large family who tried to dine together every night. Even though we have track, band, work, and various activities having to do with teens, we try to have some meals together. Weekends are better for this than during the week, so I try to make something the whole family enjoys. Salmon Croquettes with Tortellini Alfredo is one we all like. I throw in a side of peas to round it out.


Salmon Croquettes

14 oz can salmon (bones removed)

½ cup onion minced fine

¼ tsp celery seed

½ tsp dill

¼ cup bread crumbs

1tbs minced parsley

1 egg beaten

bread crumbs

Olive or canola oil

Remove bones from salmon (My sister in law says they’re good to leave in)

Add in the rest of the ingredients and mix together. Roll in breadcrumbs. Heat up oil in pan and brown on all sides.

Serve with mustard dill sauce.

Mustard Dill sauce.

3 tbs Mayo

2 tbs Dijon mustard

2 tsp dill

1 tsp lemon

Mix together and serve on the side.

Tortellini Alfredo

1 package of Tortellini

Alfredo sauce.

2 tbs olive or canola oil

2 cloves garlic

1 tsp flour

2 cups milk (skim)

4 oz cream cheese ( I use lite)

1/2 cup – shredded parmesan & romano cheese.

Cook tortellini according to package directions.

Saute crushed garlic in oil over medium heat. Add 1tsp flour and stir. Pour in two cups of milk. Add cream cheese and stir until thickened and smooth. Add parmesan and romano cheeses and herbs. Thin the sauce out with a little more milk if desired.

After draining tortellini, put in serving bowl pour alfredo sauce over it and toss until evenly coated. Sprinkle Parmesan and Romano over top.
