Seafood Cheese Baby Burgers

    • 1 lb. ground beef
    • 1 8-oz. container Salads of the Sea® Seafood Cheese Spread
    • 8 mini hamburger buns
    • Sliced tomato
    • Sliced onion
    • Lettuce or baby greens
    • 8 slices cheddar cheese

Directions: Form ground beef into eight 2-oz patties. Use your fingers to create a whole in the center of each patty. Fill each patty with one teaspoon of seafood cheese spread. Form beef to cover hole before cooking. Cook burgers on grill or skillet to desired temperature. Place cheese, lettuce, tomato and onion on each mini bun. Place cooked patty on top of each and serve. Serves four.

· Potato Thumbprints

o 1 16-oz package of shredded fresh potatoes (available in the produce section)

o 2 eggs, beaten

o 1 tbsp flour

o 1 tsp salt

o 1 tsp pepper

o 1 8-oz package Salads of the Sea Cajun Krab Dip (America’s favorite)

Directions: Preheat oven to 350 degrees. Spray two mini muffin pans liberally with cooking spray. In a large mixing bowl, combine potatoes, eggs, flour, salt and pepper until well mixed. Place one heaping tablespoon of the potato mixture into each muffin slot. Press your thumb into each muffin slot to create cups or “thumbprints”. Spray thumbprints with cooking spray and bake at 350 degrees for five to six minutes, allowing them to brown. Remove from oven and allow thumbprints to cool before gently removing them from the pans. Fill each thumbprint generously with Krab dip, garnish with fresh herbs if desired, and serve immediately. Serves 8 to 10.
