Spicy Beef Jerky

Spicy Beef Jerky
1.5 pounds flank steak or London broil
Marinade:
1 cup beef broth
¼ cup salt
¼ cup molasses
¾ cup brown sugar
¼ cup honey
2 tsps garlic powder
2 tsp chipotle powder
2 tsp cayenne pepper
1. Mix all marinade ingredients together
2. Cut meat into ¼ inch slices with the grain
3. Put sliced meat into large Ziploc bag and pour marinade over the meat.
4. Seal Ziploc bag so that all the meat is covered
5. Marinade for at least 24 hours
6. Smoke over low heat [under 200 degrees if possible] until desired dryness
7. Flip occasionally. Jerky is done when it’s dark burgundy in color. Avoid charring the meat.
8. Air dry for an hour before putting jerky into a new Ziploc bag.
