Ingredients:

2 cups flour

1 tsp baking soda

1 cup butter

1 1/2 cup brown sugar

2 eggs

1 tsp vanilla

1 tbs apple pie spice

2 1/2 cups oatmeal

Directions:

Preheat oven to 350 degrees. Sift together flour and baking soda and set aside. Cream butter and brown sugar until smooth. Beat into creamed mixture the eggs, vanilla and apple pie spice. On low speed add the flour mixture. Stir in the oats. On lightly greased cookie sheet drop 1/4 cup of batter per cookie. Gently press the dough down so it’s not a rounded ball (I left mine kind of ball like). Bake 14 minutes or until firm lightly browned. YUM!!

Our household has been going crazy the last couple of days. My daughter called it birthday season. Her birthday was Tuesday and my son had his birthday Wednesday (my husband’s birthday is coming up), so lots and lots of celebrating.

I got my daughter good. She thought she was spending the day going to the movies with me. I had a friend meet us at the movies and then when it was over, I handed her money, and said,”See ya. You’re going out to dinner with your friend.” Unbeknownst to her, they were going to meet up with her college room mate. The three of them had a great time at dinner and then went shopping at a nearby mall. When she got back home for cake with the family, she told me that I got her good.

My son on the other hand likes to plan a party with all of his friends. I don’t think he planned for it to rain all day since it was supposed to be a pool party with water balloons, but that didn’t stop him, the party went on. They hung out in the drizzle, threw water balloons, they even went swimming in the pool. Some kids didn’t bring suits –because it was raining, so they borrowed clothes. I put all the wet things in the dryer while they noshed on pizza, fruit, veggies and snacks. Those kids are a noisy, boisterous bunch who were all up to the rain and having fun.

We live in a small home and where ever the kids are, I’m kind of right around it. I felt like I should be doing something useful so I decided to make cookies. My husband is a nice guy that helps people out and some days you don’t know what he’ll come home with for payment. We’ve gotten money, gift cards, soap, veggies and cookies. These Apple Pie Spice Oatmeal Cookies are very awesome and I got the recipe. The apple pie spice kicks the Oatmeal cookie up with a little bit of spiciness. The kids loved them – and one girl told me she loved me – cookie love, it’s all good. My son thanked me and told me I was the best mom and that this was his best party EVER!!! That’s good, because he’s now 17, I wonder how much longer I’ll get to join in.
