Garlicky Smashed New Potatoes with Spinach and Lamb Mint Sausage

Lamb Mint Sausage is my new favorite sausage. We bought it at Blues Creek Farm Meats when we were at the Lamb Cutting Class and discovered that we love it . The mint is sort of subtle, and when you throw it into an Alfredo sauce like my daughter did last week, you might not taste the mint at all. However, if you cook it on it’s own and serve it without any sauce, you can get the nice mint flavor that’s subtle, but it’s there. As a result, I don’t like to mix this sausage with other foods and serve it on the side. Tonight, to go with the sausage, I made one of my husband’s favorite sides – potatoes, though he likes potatoes almost any way you can think of to prepare it. I did a rough smash, mixed it with some garlic and shallots that were sauteed in oil, and some fresh spinach that wilted down. I threw in a couple of tablespoons of butter and some garlic olive oil …
Chicken stuffed with Asparagus and Herbed Garlic Chevre
April 20, 2009 | by DianaSince it’s National Garlic Day, I wanted to come up with a dinner that had some nice garlic flavor. Originally I was going to make a salad with garlic chicken and asparagus, but while I was at the store other thoughts entered my mind and I went with it. I grilled asparagus on a grill pan first, but maybe it doesn’t really need it. We loved the whole meal and I will definitely do it again when my daughter’s home, she enjoys it when I come up with something delicious.
- 2 large chicken breasts – sliced in half, then pounded flat.
- 16 spears of asparagus
- Herbed Garlic Chevre
- Grated Parmesan Cheese
- Herbs – basil, parsley
- Salt
- Garlic-Pepper

Celebrate National Garlic Day with New York Style Snacks
April 20, 2009 | by DianaThursday, a New York Style representative contacted me. She said National Garlic Day is on Sunday, would you like some stuff to review (promote?). Since I’ve tried them before and loved them I didn’t think it was out of line and told her, if you can get it here by then, we’ll review it. She was doing me a favor after all, I would have missed National Garlic Day. My mom has trouble with Garlic, but it’s one of my favorite ingredients in food.
These snacks came along at the right time. We had cheese and hummus leftover from Easter, but nothing to spread it on because my dear husband ate it up. These snacks were great for spreading on and my favorite combination was the garlic bagel crisps with the hummus. Garlic and hummus are perfect together, so are garlic and cheeses.
