I’ve had regular quinoa, but have never seen the black version. Looks yummy!

I’ve never seen the black version either. I like quinoa, but for some reason my hubby and son don’t. They say it’s a texture thing.

I just ate the most delicious black quinoa salad that had apple slivers and pieces of roasted squash in it, with a subtle vinaigrette (apple vinegar?) taste added. Ooooh, I wish I had the recipe!
Did you know quinoa isn’t a grain after all? It’s a seed of the Chenopodium plant, related to spinach and swiss chard.
If you’re a vegan, this is the plant food for you. . .it’s a complete protein, containing all eight essential amino acids (11gms of protein per half cup).

I call quinoa a grain, because visually, it’s easier to categorize it that way for others to understand. It’s used the same as one would use rice or bulgur or other grains and can be substituted for grains, but you are right, it’s not really a grain. It is really nutricious for you. Your dish sounds great. I wonder if you could guess at the ingredients in order to recreate it. To me that’s half the fun.
